Carrot

Carrot: Carrot is sweet orange or red colored root vegetable famous to maintain healthy vision; this is because carrots have highest content of beta-carotene among all vegetables. Beta-carotene are substances, which are antioxidants and readily convert in body into vitamin A, which is good for healthy vision, healthy skin and mucous membranes of body.

Carrots also contain lutein, which is another substance important for good vision; carrots also contain vitamin C, and other vitamins like foliate. Foliate is also important for cell production in body especially red blood cells and brain cells in babies. Carrots also contain many anticancer agents. Carrots are full of fiber and good for digestion and weight loss.

Carrots are good for skin and hairs because of high amounts of vitamin A, vitamin C, folate and zinc. There is disputed data whether to eat them in raw form or in cooked or boiled form to achieve its highest antioxidant and vitamin content.

One group concluded that these should be eaten raw because cooking and boiling reduce their nutritional value. Other group suggested that in raw form, stomach could not digest it properly and cooking and boiling make their contents more absorb-able .but carrots should be eaten raw; in form of salads or moderately cooked or boiled to achieve their usefulness. Too much cooking definitely destroys its nutrients.
