Grilled Chicken, Aged Cheddar & Chutney Sandwich
This stuffed whole-wheat pita with grilled chicken, aged cheddar and chutney is an excellent addition to any summer picnic outing, as well as a great meal at home any time of year, hot off the panini press or out of the oven.
2 whole-wheat pitas (or four slices whole-wheat bread)
2 tbsp (30 mL) grainy mustard
4 tbsp (60 mL) mango chutney
1 grilled or baked chicken breast, thinly sliced
A few slices aged cheddar
2 thin slices red onion
Small handful fresh mint leaves, minced, stems removed

Cut 1 inch off the top of each pita and place the cut-off piece inside. Mix mustard and chutney together and spread inside pitas on both sides. Follow this with sliced grilled chicken breast, aged cheddar, red onion and mint. Wrap in waxed paper and pack in a cooler.
