Chicken Souvlaki Pita


Chicken Souvlaki Pita

This recipe is an easy version of souvlaki on a bun. The toppings you add are up to you and shouldn’t be limited to those in this ingredient list. I always say sandwiches make the perfect meal because of the variety you can add. Tzatziki is readily available in grocery stores; check near the deli sections. Or you can make your own by combining 1 cup (250 mL) plain yogurt, 2 grated cucumbers, 2 cloves of garlic (minced), 1 Tbsp (15 mL) vinegar, 1 cup sour cream and a bit of salt and pepper.
4 medium cooked boneless chicken breasts, diced 
1 large tomato, diced
1/2 small red onion, diced
16  kalamata olives, pitted and sliced 
1 cup (250 mL) tzatziki
1/2 cup (125 mL) hot pepper rings (optional) 
2 6-in. whole-wheat pita pockets, halved 
Large handful baby spinach leaves
To a medium bowl, add chicken, tomato, red onion, olives, tzatziki and (if using) hot peppers; toss together. Divide mixture equally among four pita halves, add baby spinach and enjoy.
Makes four sandwiches. 

Per sandwich: 499 cal­ories, 61 g protein, 14 g fat (3 g saturated fat), 29 g carbohydrates, 5 g fibre, 147 mg cholesterol, 664 mg sodium
